Unrelated to the tuber-like Jerusalem artichokes, Artichoke Globe is believed to be the ‘true’ artichoke and the bud of a large member of the thistle family. Both the soft edges of the leaves and the base of the buds (or the “heart”) are edible. However, the tough outer leaves and furry central choke as well as surrounding leaves are not.
- Use scissors to cut the tough tips of the leaves off while holding the stalk to keep the artichoke steady
- Use a knife to slice off the base of the artichoke and then trim off the pointed top
- Pull out the pale center leaves
- Use a spoon to scoop out the choke
To keep them from browning, place them in a bowl of water with a little lemon juice added. Cook them in a pan of boiling salted water for 35-45 minutes (you should be able to easily pull out a leaf when they’re done). Drain the water upside down. Cookware made of iron, copper, or aluminum may discolor artichokes; stainless steel, glass, or enamel are preferable.
